The Pimenta Jolokia Pink Ice pepper, also known as the Pink Ghost pepper, is a hybrid pepper variety developed by the Italian company Peperita. Its Latin name is Capsicum chinense x Capsicum frutescens. 
 
A Pink/Peach color variant of the Pimenta Jolokia pepper which is a cross of Bhut Jolokia and Pimenta De Neyde. Orginally grown as Pimenta Jolokia Lavender Ice named by Bryan Townsend which has darker Lavender colorization. This phenotype is much paler and almost solid peach with pink hues and blushing. Not to confuse it with Lavender Ice, this variant is called Pink Ice...of course keeping the Pimenta Jolokia and the later added Ice in the name for transparency and genetic tracking. This is just one of many variants of Enrico Lai's original cross.
 
It is a relatively new pepper variety and was first introduced to the market in 2014.
 
The Pimenta Jolokia Pink Ice pepper has a Scoville rating of around 800,000 to 1,000,000, making it one of the hottest peppers in the world. It is a medium-sized pepper, with a height of about 2 to 3 feet (60-90 cm), and the plant has a bushy growth habit with a compact size. A beautiful dark foliage plant with purple leaves and stems. A great producer and super easy to grow. .
 
The fruit of the Pimenta Jolokia Pink Ice pepper is conical, about 2 to 3 inches (5-8 cm) long, and 1 to 2 inches (2.5-5 cm) wide. The pepper starts off green and then gradually ripens to a light pink color. At maturity, the pepper becomes a light peachy color, with a slight translucence to the skin. 
 
The flavor of the Pimenta Jolokia Pink Ice pepper is fruity and sweet, with a very intense heat that can linger for several minutes after eating. It has a slightly floral aroma with notes of citrus and a hint of smokiness. This pepper is often used in small quantities to add heat and flavor to dishes such as curries, sauces, and salsas.
 
One interesting aspect of the Pimenta Jolokia Pink Ice pepper is its appearance. The pink and peach hues of the pepper give it a unique and attractive appearance, making it a popular choice for ornamental purposes as well as culinary use.
