Just wait until your plant is at least a foot tall before harvesting leaves. Then snip off the bigger outside leaves and let the little inner leaves grow for your next clipping. This plant has to many uses to name, but the dried leaves make a great natural organic tea. If you have a few spearmint plants in your yard, you can usually smell them as soon as you step outside.
