But in addition to those wonderful qualities, it is perfect for canning, making chili, on salads, or just about anything.Medium-sized tomatoes are ideal for both canning and fresh eating. Their smooth skin is crack-resistant, with a flattened globe-shaped fruit that averages 7 oz in weight. The tomatoes grow on two to three foot high plants, and are ready in 70 to 80 days.

 Sowing

Heirloom tomatos are easy to grow from seed. Use moist, sterile potting mix, and press the seeds lightly into the soil. Germination takes place in about a week if temperatures are between 70 and 75 degrees F.

 Planting

Since temperature below 55 degrees F can damage production, protect the plants if temperature drop. A thick layer of mulch helps conserve moisture and control weeds,water the plants once a week, but avoid getting the leaves wet. Determinater, or bush type tomatoes, donot require staking.

Rutgers tomatoes are a smaller (12-14 ounces), globe-shaped variety created in the 1930s to produce a tasty, hearty, and versatile fruit. The plant is an indeterminate grower that typically does not grow higher than around 36", needing 70-80 days to reach maturity.
