The Saint Louis Cookbook Paperback Book Bicentennial Issue Women's Association

In asking me to write a prefatory note to the NEW ST. LOUIS SYMPHONY OF COOKING, the ladies of the Women's Association of the St. Louis Symphony Society have not given me an advance look at the content of this volume: 
it is as well, perhaps. 

My own knowledge of cooking is more at the level of the five-finger exercise than that of the "Symphony." 

I am struck with a superstitious awe at finding that bits of dough-roughly indistinguishable to the naked eye-put into an oven seem somehow to know how they are to come out; from a vague, amorphous pasty mass will evolve something with an astonishing correspondence to the cook's intent! 

This is Black Magic, or at least being able to "call spirits from the vasty deep." (Hotspur's answer is appropriately modest to include my own culinary limitations: "Why so can I, or so can any man; But will they come when you do call for them?") 

Throughout its history, the Women's Association of the St. Louis Symphony Society has been a vital, energetic organization; it has pioneered with many original ideas. 

But the success of the first SYMPHONY OF COOKING, the predecessor volume to this one-and there must be scarcely a man, woman or child in St. Louis who has not eaten with pleasure some of the brilliant things included there—guaranteed the appearance of a second venture.

For months St. Louis' most famous and original hostesses have been flattered, bullied, wheedled and cajoled into divulging their most triumphant culinary secrets. 

Some recipes have come in willingly, others with reluctance, anguish, or self-sacrifice. 

All have come in with a complete set of ingredients listed. If food in St. Louis should become humdrum, it will not be the fault of the good ladies of the Women's Association. 

For confirmation of this, consult the table of contents. To be utterly convinced, get into the kitchen and try a recipe at random.
