Both white and black peppercorns grow on the same plant, however they undergo a different manufacturing process. In the production of white peppercorns only carefully selected fully ripe peppercorns are used, the dark outer skin is removed to reveal a white-cream color aka "white pepper".

This is why you do not see any wrinkles on the white peppercorn.
